Bikini Recipe

Serves 10 guests

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

To prepare the Syrup: Place every items into a pot, bring to a gentle boil, agitating so the sugar melts. Then, remove from the stove allowing it to reach room temperature completely. Decant to a sterilised bottle, seal keeping it in the fridge, where it will keep for up to four weeks.

For the Premix: Pour the specified spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then filter it best through muslin, to ensure it's fully clarified.

For serving: Pour 85ml from the batch mix into a stirring glass packed with ice, and stir carefully for about 60 seconds until cold. Filter to a chilled martini glass or equivalent, decorate with the cranberries and complete it with a quick spritz with the mandarin essence above the glass.
